The initial process of The Negre Vermut is carried out the same as the blanc. Made from 100% Macabeu and then the mark is distilled with up to 160 different botanicals, the key difference in this vermut between this and other Vermouth is the very low use of caramel. This results in a lighter, more fragrant, and spicy vermouth with greater balance and complexity which is much better suited to drinking straight as well as mixing in cocktails. After the wine is fermented and the blend has been completed the vermouth spends 6 months aging in a solera system.
In Spain Vermouth is drunk straight with a slice of orange and an olive and this is how we recommend it be drunk. It is also delicious in cocktails as well as with ginger ale or soda.
