Equal parts Pinot Noir and Trousseau, complemented by one-third Gamay, Poulsard, Pinot Meunier, as well as some rarities such as Argant, Portugais Bleu, Enfariné, and Mézy . Vibrant, driven by fine acidity and very delicate tannins, small black and red berries, lifted by a touch of spice.

Etienne Thiebaud created the Domaine des Cavarodes in 2007, in the village of Cramans, about 15km from Arbois in the northern Jura, close to Arc et Senans. He produces wines of incredible purity that reflect the terroir on both sides of the Loue River in the Jura and Franche-Comté. He currently has only 4.5 hectares of vines (aged between 15 and 115 years) which he farms organically, but he already produces a number of wines with a strong identity. The wines are made as naturally as possible, sometimes without sulphites, and the reds undergo a semi-carbonic maceration after careful de-stemming and maturation in old barrels. The main vineyard sites are : – Lumachelles which is in the commune of Mouchard just north of Arbois which enables it to produce a Chardonnay, a Trousseau, a Pinot Noir and a Poulsard – Guille Bouton in Arbois which produces a superb Chardonnay – Les Messagelins which is also in Arbois and produces a Poulsard, a Trousseau and a Chardonnay. These nectars are increasingly sought after by wine lovers.
