Simon Amber has quietly been producing his own wines, Gemini, since 2017. And I say quietly as these first wines weren’t released until 2021. The fruit is strictly organic from Mount Compass, the Adelaide Hills and McLaren Vale and his focus from the beginning was time. Wines are elevaged in barrel for 10‑12 months as a minimum followed by time in bottle prior to release. Alongside Gemini he has continued his work with Monique and Tim at Manon, where he has been a part of the family for many years now. Phenolic ripeness, whole bunch macerations, basket pressed fruit and no additions. Simmo’s wines are vivid and detailed.
