Xarello is a local Spanish variety known widely as the backbone for Cava production. But in the hands of a master like Joan Rubio, it is elevated to Champagne heights. The fruit for this small production cuvee (1400 bottles) comes from a single site planted to 40 year old vines on sandy calcareous soil. Aged on lees for 14 months and hand disgorged it’s is an Ancestral for drinking now as well as for ageing.

The aromas are of freshly baked apple pie, the first sip of biting into a fresh granny smith apple straight off the tree, the acidity bringing the freshness. With a mouth filling palate, it displays finesse and incredible length. The Spanish often refer to top sparkling wine as being gastronomic, and Joan’s Ancestral has the strength to be served at the table with food, especially the most sumptuous seafood platter and fresh sea urchin.
