Gamay d’Auvergne from vineyards on basalt in the northern part of Auvergne. Few days of maceration and then pressed into stainless steel before ageing in an older barrique. A rose’ non rose’ of incredible depth and complexity, from raspberry and strawberry to rhubarb, citrus and spices. It opens with a little effervescence that disappears after couple of swirls.
