Tim Sproal crafts Minim Wine at Boomtown, a small co-operative in Castlemaine that he co-founded over a decade ago with Pat Underwood (Little Reddie) and Jarad Curwood (Chapter Wines). The wines speak clearly of Central Victoria – a region defined by its varied geology, soils, climates, and farming histories.
They shift fluidly between focus and freedom: sometimes contemplative, sometimes playful — always rooted in place.
